Meet the Chef
Franks style of cooking is simple, yet classic which offers guests a fine dining experience within a stunning setting incorporating seasonal and local to showcase the South West’s produce.

Fowey’s newly appointed Head Chef, Frank Bailey began his career 12 years ago in Wiltshire at Bishopstrow house hotel, another Von Essen hotel.
He left there after 3 years for his first head chef role. Returning back to Bishopstrow 3 years later, to take over as head chef.
After 3 years here Frank went down to New Park Manor in the New Forest to over see the kitchens there.

More recently Frank headed the kitchen at The Bath Arms an award winning boutique hotel in Wiltshire on the Longleat Estate, home of the television series Animal Park.

Most of Frank’s career has been focused around the south west area which he loves due to the abundance of quality local suppliers which he uses as inspiration for his menu’s including fish and seafood from St Austell Bay and Brixham and meat from local Cornish farmers.

He maintains Fowey’s English Country House feel with exciting innovative modern cooking whilst maintaining seasonality. Franks philosophy is to ‘take it back to basics using hands on, modern cooking techniques.’

Being a father of three little ones, Frank is passionate about providing our little guests with wholesome and tasty meals which parents approve of and the little diners love too.
