New season, new chef!

Say hello to our new Head Chef, Wesley Pratt who joins us this Autumn bringing with him over 20 years’ experience working in the kitchens of luxury hotels and local restaurants. Wes grew up in Cornwall and enjoys cooking with an abundance of great local ingredients from our fantastic local suppliers – he loves letting the flavour of good ingredients speak for themselves.

We keep our menus seasonal and Autumn is a fantastic time of year for so many of our favourites from damsons and sloes to kale and pumpkins.  Wes, like all of us, loves being a big kid around Halloween and we all love choosing and carving our pumpkins to put proudly on display on our porches. Pumpkins are in abundance at this time of year so why not grab your cauldron (or a saucepan would do) and try making a delicious pumpkin soup or even roasting the pumpkin seeds with salt and vinegar for a nibble before dinner.

Wes has shared with us his recipe for a delicious Roasted Pumpkin and Ginger Soup for you to try at home:

1kg pumpkin

4 x shallots

75g ground ginger

Sprigs of fresh mint and chives

Extra virgin olive oil

1 litre vegetable stock

125ml coconut milk plus extra milk to serve

½ tsp chilli powder

1 x lime

Method:

1. Deseed and dice the pumpkin. Peel and chop the shallots, then peel and finely grate the ginger and finely chop the herbs.
2. Place the oil in a large saucepan, add the diced pumpkin, shallots and ginger and cook until soft.
3. Add stock, coconut milk and chilli powder. Season. Bring to boil and simmer for 40 minutes or until pumpkin is soft.
4. Blitz in a food processor until smooth then serve with fresh herbs, lime juice and a splash of coconut milk.

If you are thinking of bringing your little monsters away for the October half term there are some great activities happening here at the hotel with potion and spider web making in the creche as well as a Halloween tea and disco with apple bobbing.

Getting out and about there are some great events at the Eden Project with their annual Little Monsters Ball on Saturday 27th October as well as a fortnight of magical activities from 20th October – 4th November where you can come face to face with roaming magical creatures, explore the Beastly Bazaar and enter the dangerous animal zone to take on a series of challenges. All that and a skate on the ice rink makes for a magical day out this half term.
